SIMPLE SALAD GUIDELINE

These are very simple and quick salad recipes. They don’t take take up to ten minutes to make as long as you have all the ingredients on hand.

You can always switch up, add or remove some of the ingredients according to your taste and mood at that particular moment.

Today, I will be showing you the basic steps on how to make your salad. (Salad doesn’t have to be boring)


INGREDIENTS

  • Any leafy greens (lettuce,kale,spinach, etc)
  • Crunchy vegetables (carrots, beets, bell pepper, cabbage, cucumbers etc)
  • juicy fruits/vegetables (tomatoes,grapes, etc)
  • Protein (chicken, fish, tofu, eggs, chickpeas, beans, etc)
  • Starch [potatoes, rice,quinoa, etc (I don’t usually put them to be honest)]
  • Optional toppings (sauerkraut, chia seeds, pumpkin seeds, Avocado, Slivered almonds, etc)

Easy Dressing recipe

  • One part acid (lemon juice, Vinegar)
  • Two parts oil (olive oil is highly recommended)
  • Herbs of choice (thyme, rosemary, basil, etc)
  • Optional sweetener (honey, date syrup, sugar, etc)

[ you can make a creamy dressing by adding hummus, Greek yoghurt or mayonnaise]


PREPARATION

Chop, slice, shred or tear your vegetables however you want.

Try to make it pretty though. Because I believe that the prettier your food is, the more likely you are to eat it and enjoy it.

The salad above has lettuce as it’s base, carrots, cucumber, green bell pepper, chickpeas, tomatoes and sauerkraut.
This is the same as the above but with fish.

This has lettuce,cucumber,beets, carrots, corn,eggs,cabbage, tomatoes
and green beans.
The base is spiralized cucumber, (just to make it fancy😂😂) sautéed spinach and kale, roasted chickpeas, tomatoes, radish and eggs. Topped with flax and chia seeds.

NB: you can use one or more of the Ingredients. Don’t be scared to mix stuff up

and make something entirely new.

Bright purple smoothie bowl

This beautiful smoothie bowl is perfect for those hot mornings where you want something cold and sweet but still relatively healthy.

It’s very simple to make as long as you have a blender and freezer.

I topped this one with some granola (link to my homemade granola here Chocolate Granola) and chia seeds


INGREDIENTS

  • One banana (frozen)
  • Half an avocado (for extra creaminess)
  • Beetroot (for that bright purple color)
  • Orange segments
  • Liquid of choice (Orange juice, Green tea, coconut water, plain water, milk, yoghurt etc) [I used milk for this one]
  • a teaspoon of baobab powder (optional)
  • A teaspoon of flax seeds (optional)
  • You can basically do any type of fruit you want. The only way it would be thick with that smoothie bowl consistency, instead of the normal smoothie is of you freeze some or most of the fruits. (Especially the bananas)

  • PREPARATION
  • Throw everything in the blender and blend it up till there are no more chunks of fruit or vegetables left
  • Tip: The heat from the blender blades may make the smoothie a bit runny, so you could put it in a bowl and put it back in the freezer to set some more.
  • Lastly, top it however you want

    The above is marbled with some Greek yoghurt and topped with chia seeds, baobab powder, granola and cocoa flavored coconut chips

    The above is the first one but mixed together.

    Baked Potatoes and salsa

    This is a really easy recipe that you can do as long as you have an easy bake oven or any oven for that matter.

    I just garnished it with carrots and green peppers for picture purposes 😂😂


    INGREDIENTS

      Potatoes – the amount of potatoes you use depend on how large the potatoes are and how many people you’re cooking for (I used 4 medium sized)
      Tomatoes
      Garlic
      Onions
      Oil of choice
      Salt
      Mixed herbs (optional)

    [you can also use whatever seasonings you want. You could also add some chilies or small peppers to the salsa but I don’t like spicy food so I didn’t add any]


    PREPARATION

    Preheat the oven to about 350f or 180c

    Thoroughly wash the potatoes to get rid of any sand or dirt.

    On the other hand, you can peel the potatoes. But I think that that is more time consuming and there’s a lot of nutrients and fiber in the peel.

    Chop them as thin or as thick as you’d want them to be. Try as much as possible to cut them to be the same size so that they cook evenly.

    Coat them in a bit of oil and season as you would like.

    Put them in the oven until they’re lightly golden brown and crispy on the outside

    For the salsa

    Roughly chop tomatoes, onions and garlic and put in a put with a bit of water. Boil it until tender and onions are translucent.

    Blend the mix in a blender. Don’t blend it too much because you would want some chunks in the salsa.

    Serve your potatoes with the salsa and enjoy your delicious filling meal 😋❤️

    Chocolate Granola

    Have you ever been in need of a good quick fix of chocolatey goodness but still want it to be a bit healthy? Well then, this delicious and decadent chocolate granola is just for you!!!

    I went to the store the other day with my grandma and saw rolled oats and some coconut flakes and “granola” immediately came to my mind. I thought about what I had and what I could use to make what I wanted.


    INGREDIENTS

    • 2-3 Cups of rolled oats
    • 1/2 Cup of quinoa (yes, you can bake raw quinoa)
    • 1/3 Cup of coconut flakes
    • 1/4 Cup of roughly chopped peanuts
    • 2 Tbsp of chia seeds
    • 2 Tbsp cocoa powder
    • A pinch of salt
      Cinnamon and nutmeg to taste
      Baobab powder (optional)
  • Coating
    • 2 Tbsp of honey
      1Tbsp of cocoa powder
      1 Tbsp nutella 😋 (optional but highly recommended)

  • PREPARATION

    Preheat oven to 180c or 350f.

    Combine all dry ingredients into a large bowl .

    Coat the baking pans in coconut oil so the mix won’t stick to the bottom of the pan.

    Pour the dry granola mix on the baking pan and spread out, making an even layer.

    Put in the oven for 10 minutes.

    Meanwhile, mix the honey, cocoa powder and Nutella😋 in a bowl. I put the bowl in the microwave for about 20 seconds to melt it a little bit so it’s easier to incorporate.

    Bring out the granola from the oven after 10 minutes and mix in the coating.

    Put on the baking sheet again for an extra 5 minutes to crisp it up.

    Finally, bring the granola out to cool before putting them in containers. They would be a bit chewy when they’re hot. But they become a lot crunchier when they’ve cooled down.

    Enjoy your Delicious Granola with Yoghurt,Milk, In smoothie bowls or just eat it straight out the bowl!!..
