Baked Potatoes and salsa

This is a really easy recipe that you can do as long as you have an easy bake oven or any oven for that matter.

I just garnished it with carrots and green peppers for picture purposes πŸ˜‚πŸ˜‚


INGREDIENTS

    Potatoes – the amount of potatoes you use depend on how large the potatoes are and how many people you’re cooking for (I used 4 medium sized)
    Tomatoes
    Garlic
    Onions
    Oil of choice
    Salt
    Mixed herbs (optional)

[you can also use whatever seasonings you want. You could also add some chilies or small peppers to the salsa but I don’t like spicy food so I didn’t add any]


PREPARATION

Preheat the oven to about 350f or 180c

Thoroughly wash the potatoes to get rid of any sand or dirt.

On the other hand, you can peel the potatoes. But I think that that is more time consuming and there’s a lot of nutrients and fiber in the peel.

Chop them as thin or as thick as you’d want them to be. Try as much as possible to cut them to be the same size so that they cook evenly.

Coat them in a bit of oil and season as you would like.

Put them in the oven until they’re lightly golden brown and crispy on the outside

For the salsa

Roughly chop tomatoes, onions and garlic and put in a put with a bit of water. Boil it until tender and onions are translucent.

Blend the mix in a blender. Don’t blend it too much because you would want some chunks in the salsa.

Put it back in the pot and add your seasonings.placeholder://

Serve your potatoes with the salsa and enjoy your delicious filling meal πŸ˜‹β€οΈ

I really truly love your very healthy foods, they look really delish and colourful,but I would have loved that you state the sort of oil you prefer to baste your potatoes with as you advice that we can use whichever is preferable by your readers to use.
